Nasi Bali with Ayam Betutu

Ingredients:

  • 2 cups jasmine rice
  • 3 cups of water

  2. Put the rice in a saucepan with the water, lemongrass, lime leaves and salt and bring to the boil.

  4. Remove the pot from the heat and let the rice sit for about 5 minutes before serving.

Ayam Betutu

Ingredients:

  • 1 whole chicken
  • 10 shallots
  • 5 cloves of garlic
  • 5 red chili peppers
  • 5 green chili peppers
  • 1 piece of galangal
  • 1 piece of turmeric
  • 1 stalk of lemongrass
  • 2 lime leaves
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • banana leaves

Directions:

  1. Peel the shallots and garlic cloves and finely chop them along with the chili peppers, galangal and turmeric.
  2. Put the chopped ingredients in a bowl and add the salt and sugar.
  3. Mix well and rub the chicken inside and out.
  4. Place the chicken on a banana leaf and wrap it carefully. Tie the package with twine.
  5. Place the chicken packet in a pressure cooker and steam until the chicken is cooked through, about 2 hours.
  6. Remove the chicken from the pressure cooker and serve with nasi bali.

Lawar

Ingredients:

  • 1 cup grated coconut
  • 1 cup chopped green beans
  • 1 cup chopped papaya
  • 2 shallots
  • 2 cloves of garlic
  • 2 red chili peppers
  • 2 green chili peppers
  • 1 piece of galangal
  • 1 teaspoon shrimp paste
  • juice of 1 lime
  • salt to taste

Directions:

  1. Peel the shallots and garlic cloves and finely chop them along with the chili peppers and galangal.
  2. Heat a pan without oil and toast the grated coconut until golden brown. Remove the coconut from the pan and set aside.
  3. In the same pan, heat a little oil and sauté the chopped shallots, garlic cloves, chili peppers, and galangal until fragrant.
  4. Add the chopped green beans and papaya and sauté for about 5 minutes.
  5. Add the shrimp paste and stir well.
  6. Remove the pan from the heat and add the toasted coconut and lime juice.
  7. Mix well and add salt as needed.
  8. Serve lawar with nasi bali and ayam betutu.

Sambal Matah

Ingredients:

  • 6 red chili peppers
  • 6 shallots
  • 3 cloves of garlic
  • 3 lime leaves
  • 2 stalks of lemongrass
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • 2 tablespoons coconut oil

Directions:

  1. Peel the shallots and garlic cloves and finely chop them along with the chili peppers.
  2. Finely slice the lime leaves and finely chop the lemongrass.
  3. Put the chopped ingredients in a bowl and add the salt, sugar and coconut oil.
  4. Mix everything well and let the sambal steep for about 10 minutes before serving.
  5. Serve sambal matah as an accompaniment to nasi bali, ayam betutu and lawar.
