- 1 teaspoon shrimp paste
- juice of 1 lime
- salt to taste
Directions:
- Peel the shallots and garlic cloves and finely chop them along with the chili peppers and galangal.
- Heat a pan without oil and toast the grated coconut until golden brown. Remove the coconut from the pan and set aside.
- In the same pan, heat a little oil and sauté the chopped shallots, garlic cloves, chili peppers, and galangal until fragrant.
- Add the chopped green beans and papaya and sauté for about 5 minutes.
- Add the shrimp paste and stir well.
- Remove the pan from the heat and add the toasted coconut and lime juice.
- Mix well and add salt as needed.
- Serve lawar with nasi bali and ayam betutu.
Sambal Matah
Ingredients:
- 6 red chili peppers
- 6 shallots
- 3 cloves of garlic
- 3 lime leaves
- 2 stalks of lemongrass
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 2 tablespoons coconut oil
Directions:
- Peel the shallots and garlic cloves and finely chop them along with the chili peppers.
- Finely slice the lime leaves and finely chop the lemongrass.
- Put the chopped ingredients in a bowl and add the salt, sugar and coconut oil.
- Mix everything well and let the sambal steep for about 10 minutes before serving.
- Serve sambal matah as an accompaniment to nasi bali, ayam betutu and lawar.
